» 3lb Chicken Fried Steak

1.DAVE’S TRIPLE B: Macaroni and Cheese + 3lb Chicken Fried Steak

MACARONI AND CHEESE: Make a roux with flour and butter and stir continuously. Add whole milk and continue stirring it in until it’s a smooth, milky consistency. Add seasoning, a stick of cream cheese and a bowl of grated cheese. In a separate pot, boil macaroni noodles with salt. In a bowl, pour the cheese sauce over the noodles and mix together. Pour the noodles and cheese into a pan and sprinkle cheese over it. Place in the oven and allow to bake.

3LB CHICKEN FRIED STEAK: Put the meat through a tenderizer. Pound out 3lbs of wagyu steak, making a flat oval shape. In a large pan, add flour, salt and pepper. Dip the wagyu steak in flour and then in egg wash. Take the drenched wagyu steak and place in another pan with a mixture of flour, cayenne pepper, paprika, garlic powder and onion powder. Cover both sides with the seasoned flour. Place the wagyu steak in a Tilt Skillet fryer with wagyu Tallow – cow kidney fat (beef fat) instead of vegetable oil. Allow the wagyu steak to fry until golden brown. Remove the country fried steak from the fryer. Place it on top of 2lbs of french fries. Smother with white gravy.

Pantaleone’s is “DENVER’S BEST PIZZA” according to Pete – Owner, Pizza Provocateur and Star on Kitchen Nightmares when they filmed at his Denver pizza joint 5 years ago. Gordon Ramsay railed against Pete’s award-winning pizza in one of the most popular episodes ever! I had the pleasure of visiting Pantaleone’s in 2019 and meeting Pete, getting a behind-the-scenes talk while he made a Sausage Pizza from scratch and talked about the show, pizza and life! BIG BITE!!!

Special Notes: It’s been 5 years since the show aired and Pete tells me they still serve people inside until well after midnight even during the week! Can you believe it has been TWO YEARS since I did my first Jollibee taste test?! I can’t!! Feels like it was just yesterday when I said I thought the gravy was too sweet and I didn’t like it! Hahaha, I’ve come a long way since then. Chicken and rice and extra gravy are HEAVEN.

1. BIG BOB GIBSON BBQ: Beef Brisket + Alabama White Sauce + Spitfire Chicken + Mac & Cheese

🐄 BEEF BRISKET: Marinate brisket with salt and pepper and put brisket in smoker to cook overnight for 12-14 hours at 250 degrees. Slice into thin pieces and enjoy.

🍛ALABAMA WHITE SAUCE: Mix together apple cider vinegar, cayenne pepper, salt, mayonnaise and lemon in a large bowl.

🐥SPITFIRE CHICKEN: Season chicken pieces with salt and place them on the grill. Dip chicken pieces in chicken oil. Sprinkle ground pepper on the chicken and allow it to cook. Roast chicken 1 ½ hours on each side and then dip chicken in Alabama white BBQ sauce.

🧀 MAC & CHEESE: Cook noodles until al dente. Drain noodles and return to pot. Add butter and stir. Add Muenster, cheddar and velveeta cheeses until melted. Stir in half and half and salt. Top with soft layer of shredded cheese, salt and pepper and place in oven for 25-30 min.

🇺🇸 BAKED BEANS: Pour beans, pepper, bacon, ketchup, onions and other ingredients listed above in full size and pan. Then place in oven for 1 hour at 500 degrees

🍘SAUSAGE GRAVY & BISCUITS: Refrigerate ingredients for 15-20 minutes before preparing. Whisk together unsalted butter, vegetable shortening, self-raising flour and salt in a bowl. Add buttermilk. Flatten the dough using a rolling pin. Cut circles out of the dough using a cookie cutter and place in baking pan an inch apart. Put butter on top and refrigerate. Place the biscuits in the oven to cook.

🍛PORK BRAINS SCRAMBLED EGGS: Soak pork brain into a brine. Rinse using plain water. Season brains with salt and pepper and saute in a pan for a few minutes. Add eggs and saute until fully cooked.
